Fall Favorites

Here are a few of my favorite fall recipes. The first is a really good one. When I tried it for the first time, I was with my mom and we about ate the whole pan together. Yum!

Pumpkin Bars
Serves: A crowd
Ingredients:
4 eggs (beaten)
2 C. Pumpkin
1 C. oil
2 C. Sugar
2 C. flour
1 tsp baking powder
1/2 tsp. Salt
2 tsp. Cinnamon
1 tsp. Baking Soda

Frosting:
6 oz. Cream Cheese (softened)
1 C. Butter (softened)
2 T. Milk
2 tsp. Vanilla
3 1/2 C. Powdered Sugar

Method:
Mix the 4 beaten eggs, 2 C. pumpkin, 1 C. oil and 2 C. sugar. Then add 2 C. flour, 1 tsp. baking powder, 1/2 tsp. salt, 2 tsp. cinnamon and 1 tsp baking soda. Mix well.
Spread on greased Texas cookie sheet. **This mixture makes 1 1/2 cookie sheets** Bake at 350 degrees for 20 minutes (until spongy in center). Let it cool. Mix together frosting ingredients and spread over top.


The second recipe is great also. I love this one, because it's super easy and tastes great!

Apple Dip

Serves: A crowd
Ingredients:
1 8 oz. package Cream Cheese (softened)
1 C. Brown Sugar
1/4 C. Sugar
1 tsp. Vanilla
1/4 Bag Heath or Toffee Chips (estimated)

Method:
Mix the first four ingredients together. Once they are mixed then stir in Toffee Chips. Serve with Green apples (or your favorite type of apple)
